Instant Dinner
I really do love to cook, but more often than not, our dinnertime is always converted into its simplest form. Maybe because I value my time and energy or maybe because I'm just lazy, hehe...Almost no-cook recipe for today's dinner.
Vegetarian Vermicelli
Vermicelli noodles (soaked in hot water for about 15 mins)
1/4 cup thinly sliced carrots
1/4 cup strips of cucumber
1/4 cup chopped red and green bell pepper
1/8 cup chopped malunggay leaves
1/8 cup chopped corriander
For the sauce:
1/8 cup water
1/8 cup soy sauce or fish sauce
1/8 cup lemon or calamansi juice
2 tbsps muscovado sugar (add more if you want it sweeter)
Procedure: Mix all the sauce ingredients then pour over the vermicelli and vegetables :)
As a special request, I added organic egg omelet with fried kimchi on the side and pineapple strawberry shake.

A Book, A Movie, And A Dinner
It's only Monday and I don't have any idea what to feed my family,hehe... Blame it on Lauren Oliver for writing such a good book - Delirium. It's been on my 'to read' list since last year but I've just revisited that list last night when I woke up and can't fall asleep 'til dawn. So I wanted to finish it today after watching the movie, Mirror Mirror--it just happen to be our Monday date with my Mr.
Oh well, since dinner doesn't have to be too heavy on the belly, simple ingredients such as focaccia bread, cream, shredded quickmelt cheese, black olives, sundried tomatoes with oregano(i made my own by roasting sliced, seeded tomatoes with olive oil, sprinkled with dried oregano) chopped fresh basil, and sliced button mushrooms. Later, after I posted this blog, I'll assemble it and put in the oven at 180 deg. 'til the cheese melts and viola! Vegetarian pizza on focaccia, to rescue the busiest mother/wife, hehe...

In My Bag
One of the simple things I want in life is to have anorganized bag, how I wish to include closet, but I tend to be burara at timesso my closet is a bit chaotic at times also, Hehe.. So while removingunnecessary receipts and flyers in my overused bag, I decided to take pictureson the bits and pieces. Idon’t usually bring them all, I just pick what I need in every go, and it alsodepends on the size of bag I will use.

Happy Birthday, Joie! (a.k.a. Enzo)
“Be a strong man when you grow up.” Ate Angel’s birthday
wish for Joie (and for herself? Hehe..She might be so worried because she knows,
someday, she’ll be in-charge of Joie :))
It will be really so much harder being a special man than to be a special child,
that is why she wished him to be strong. No worries Ate, with your wish and
Mama and Daddy’s guidance and support, I still believe in hope and I know it’s
not just hype that sooner or later Joie will be able to take care of himself
and learn how to read this post, and just smile at it :) For the meantime, I just wish Joie a
very happy birthday, may God continue to bless you every single minute of your life. I believe that you always feel how much I truly love you with all my heart (of course, Daddy and Ate, do so, too!)

One of my everyday favorite foods (buchi, vegetarian siopao, and fresh lumpia) are made from this store. I'm almost here everyday, since it opened this branch near our place. I just can't get enough! :)
